Watery Wednesday

There are a lot of wonderful things to explore and discover on the beach and these three girls are enjoying the day! But while they are out searching for treasure, they are being watched!

We were watching them but so was a big black crow hiding behind a rock. Can you spot him?

Macro Monday

It is almost time to start the winter cleanup in the garden and get rid of the old dead bits and pieces of last year's bounty. Even the old dry brown stalks of weeds hold a certain fragile beauty as they make way for new growth.

We aren't so enamoured with weeds when summer is here, we don't want to have to spend time pulling the weeds when there are so many other things we could be doing instead in the nice weather.

So maybe its better to leave them alone in the summer so they will be around in the winter when you are looking around for something that just screams "Take my picture!"

Today's Flowers

Flowers can be found in lots of different places.

These embroidered flowers are from a large Quilted Wall Hanging and depict all the Provincial Flowers of Canada.

British Columbia's flower is the Dogwood.

Alberta's provincial flower is the Wild Rose.

Saskatchewan's flower is the Western Red Lily.

Manitoba's flower is the Prairie Crocus.

Ontario's flower is the White Trillium.

Quebec's flower is the Blue Flag.

Nova Scotia's flower is the Mayflower.

New Brunswick's flower is the Purple Violet.

Prince Edward Island's flower is the Lady's Slipper.

Northwest Territory's flower is the Mountain Avens.

Yukon Territory's flower is the Fireweed.

Newfoundland's flower is the Pitcher Plant.

Canada's symbol is the Canadian Maple Leaf.

My Aunt Naomi used to make quilts when she was alive for all her children. When she found out she had Alzheimer's disease she set about making a new quilt for each of her seven children, my cousins, before her disease took away her memories. She was creating a lasting memory for each of the seven. From the first quilt she created to the last one she ever made, you could see the progress of the Alzheimer's Disease. The quilts are a legacy to her love of her children and to her tenacity to remember and to be remembered. Wrapping yourself in a special Quilt made just for you is like receiving a loving hug. It's a beautiful thing.

Skywatch Friday

Chicken Curry Dip

CHICKEN CURRY DIP

1 lb. Ground Chicken

1 medium chopped Onion

1 TBSP. Grated fresh Ginger

3 or 4 minced Garlic Cloves

1 tsp. Ground Cumin

1 1/2 tsp. Curry Powder

1/2 tsp. Pepper and 1/2 tsp. Salt

Fry all the above ingredients together until chicken is cooked and onions are browned well. Add the mixture to a large bowl.

Combine with:

8 oz. Cream Cheese, softened

1 Cup Grated Mozzarella

1/4 cup Golden Raisons

1/4 cup Mayonaise

1/4 cup chopped Green Onions

1 TBSP. Curry Powder or to taste.

Mix all ingredients together well and scoop the mixture into a Corning Ware 8x8 pan. Bake in the oven at 400 degrees for 18 to 20 minutes.

This comes out of the oven looking like this!

Onto the next step....

Cool baked dip for a couple of minutes until the bubbling stops, then spread the entire top of the dip with Mango Chutney.

This one will do! Spread a good thick layer of it over the top of the dip.

Here is what it will look like.

Now that the dip is covered with Mango Chutney it is ready for its final topping.

TOPPING:

1/4 Cup Sweetened Flaked Coconut

1/4 Cup Slivered Almonds

Garnish with Chopped Green Onions

And its ready to eat!

You can serve this warm dip with Pita Chips or Slices of Naan.

This dip has it all, sweet, salty, savoury and spicy. I am sure you will love it!

Ruby Tuesday gets wet on Watery Wednesday.

This past weekend, the owner of a Dragon Boat, launched the boat at the local Mill Lake and offered people a ride.

Each trip was around twenty minutes or so and went around the lake about twice before coming back to the boat launch.

I love the reflections of the boat and the life jackets in the water. There were other small boats out on the lake as well, enjoying the day fishing.
