Skywatch Friday

For this week's Skywatch Friday I am sharing a few pictures I took of the skyline of Victoria as seen in the Inner Harbour downtown.
Victoria is the capital city of British Columbia, located on Vancouver Island. It is surrounded by water on two sides, the southern most tip of the island. Lots of boating to be seen here!
It is also home of some of the Tall ships. I think this boat looks kind of cool up against the gloomy sky!!

And to give you an idea of how mild and balmy the weather here has been for the dead of winter, the trees are confused! Cherry blossoms are blooming. The weather has been warm, shirt sleeve weather.

Bacon Explosion



BACON EXPLOSION


My son Eric is the guest cook on this segment, cooking up for us one of his specialties. I have seen this recipe before but never tasted it or seen it made. It is not for the faint of heart, literally, this recipe is all about the pork!!
Above is some of the ingredients:
2 pounds Mild or if you like Hot Italian Sausage.
2 pounds of Maple cured Bacon
Barbeque Sauce.

To form the base of the Bacon Explosion weave together two pounds of bacon strips into a basket weave. By the time you are done you have a large rectangle of weaved bacon formed.

Meet my son Eric. Here he is combining 2 pounds sausage meat with onions, celery, peppers, and barbeque sauce. He is going to spread this over top of his bacon lattice.

Overtop of this layer he spices it to his liking and then adds a  layer of Jalepeno Havarti Cheese.


Now it is all ready to roll up into a log. Using the layer of Parchment Paper under the bacon to roll it up into a bacon log. Tuck in the ends carefully as well. Place the whole thing carefully onto a cookie sheet and brush liberally with Barbeque Sauce.

Bake this bad boy in  a 375 degree oven for about one hour. You probably will have to drain off some of the bacon fat while it cooks. Your house will smell divine!!

And here it is!! It really is wonderfull!

We served this with Garlic Mashed Potatoes and some Brussel Sprouts and Brocolli Crowns that I also roasted in some of the bacon fat.

If you choose to make this, you can play around with the ingredients to suit your own tastes. You can make a meatloaf mixture out of the sausage and add any of your favorite ingredients and spices to the mix. You can use your own favorite cheeses. The sky is the limit!!

Friday's Fave Five


My Friday's favorite fives are all happening right now!!
1) Taking the day off from work and sleeping in. I didn't get out of bed until 10am which for me is like sleeping in an extra 6 hours. Normally I get up at 4am to get ready to go to work. Usually a sleep in for me is getting up at 7. So I really got to sleep in this morning!!
2) The house to myself. My hubby works from home running our business but is in and out with it so this morning he is out and it is just me and the cats. I wouldn't like it too often to have the house quiet like this but once or twice is nice!
3) A pot of Starbucks Christmas blend coffee and some whipped cream to whiten it. So creamy!!! And a slice of Texas cut Raison Toast and butter to eat with it. I know, its not very nutritious but it sure is delicious!
4) The sound of the rain on my skylight. Its a relaxing sound to hear when you are warm and cozy in your home. I love watching the rain from the shelter of my home.
5) My new book that I borrowed from the library that I have been reading. It is called Exposure and Lighting for the SLR Digital Camera and I can read it slowly and try out its suggestions at my leisure. The heat is on, the rain is falling, the coffee is flowing and the house is quiet. Excellent learning conditions!

Skywatch Friday

For Skywatch Friday here are a few pictures taken at Matsqui Park along the Fraser River. The park consists of  a series of dykes that meander along the river and through farmer's fields.




Mount Baker and the Coastal Mountains are in view above farmer's fields. It was a warm, cloudy day, a good day to take the camera out for a walk!!

Stuffed Baked Potatoes


Shepherd's Pie Stuffed Baked Potatoes that is!!
What to do with a bunch of leftover pot roast and gravy?
Take 4 large Russet Potatoes, coat in oil and season with salt and pepper and bake in the oven until cooked.

Stuffed Baked Shepherd's Pie Baked Potatoes.

1/2 red bell pepper, seeded and chopped

1 medium onion, chopped, divided
Freshly ground black pepper
1/2 cup sour cream
1 tablespoon smoked paprika
1 pound ground sirloin 
1/2 pound button or crimini mushrooms, quartered
2 cloves garlic, finely chopped or grated
2 tablespoons butter
2 tablespoons flour
1 1/2 cups beef stock
2 tablespoons spicy brown or Dijon mustard
2 tablespoons soy sauce
2 tablespoons Worcestershire sauce
1/2 cup shredded smoked Gouda cheese, for sprinkling on top
While the potatoes are cooling, place a medium skillet over medium-high heat with Olive Oil, about 1 tablespoon. Add the bell pepper and half of the onion to the pan, season with salt and pepper, then cook until the veggies are tender, 5-6 minutes. Transfer them to a large mixing bowl.

When the potatoes are cool enough to handle, slice in half and scoop out the potato flesh, taking care not to pierce the wall of the potato, and transfer to the bowl with the veggies (reserve the potato shells). Add the sour cream and paprika to the bowl and mash. Reserve warm.
Place a large skillet over medium-high heat with Olive Oil, about 2 tablespoons. Add the ground or chopped  sirloin to the pan and cook until golden brown, 5-6 minutes. Add the mushrooms and cook until they start to turn golden brown, 4-5 minutes.
Add the remaining onion and garlic to the pan and cook until all the veggies are tender, about 5 minutes more. Push all of the ingredients to the edge of the pan and add the butter to the skillet. Sprinkle the flour over the melted butter and cook for about 1 minute. Add the stock, mustard, soy sauce, Worcestershire sauce and some salt and pepper to the skillet and stir to combine. Bring up to a bubble and simmer until thickened, 2-3 minutes. I just used leftover gravy but you can make your own.
Fill the potato shells with the beef and mushroom mixture, then top each of them with the reserved mashed potatoes. Transfer to a baking sheet and sprinkle with the cheese. Pop the potatoes under the broiler until the cheese is melted and tops are golden brown.


These are a whole meal in a Potato!


On a separate note, potatoes can really be stuffed with anything to make a meal, a protien, a vegetable and some cheese and the possibilities are endless!!

Macro Monday


I have been trying for days now to get a picture for an amateur photography contest I enter weekly. The theme this week is Silver and it is harder than it seems. This is a silver ornamental bow and as you can see it is picking up all the colours in the room along with just the silver. Its not exactly what I was trying to achieve when I took the photos, but it is kind of pretty I think.
