Coconut Coated Salmon Fillets and Potato Kugel


Coconut Crusted Salmon Fillets
1 1/2 cups Unsweetened Coconut
Salt and Pepper to taste
4 boneless Salmon Fillets
Mango Chutney
Put Coconut into Ziploc bag, add Salmon fillets and shake to coat well. Put coated Salmon onto Parchment lined baking pan.
Sprinkle liberally with Salt and Fresh Ground Pepper.
Bake at 375 degree oven for 10 minutes or until fish is golden brown and flakes easily.
Serve fillets with Mango Chutney.
Coated with Unsweetened Coconut and Salt and Pepper and ready for the oven!!
Potato Kugel
I have always loved Potato Pancakes and over this past Christmas, discovered Kugel when I didn't want to be a slave over the stove and rather spend the time visiting while dinner cooked.
3 Russet Potatoes, grated and squeezed to remain moisture
1 finely chopped Onion (I used a big handful of chives from my garden)
5 large Cloves Garlic, grated
1 egg, beaten
1/2 tsp Baking Powder
1/4 Cup Olive Oil
1/4 Cup Flour
1 tsp Salt
1/2 Tsp Pepper
Coat Glass baking dish with layer of Olive Oil. Mix all ingredients well and spread out into an even layer in the bottom of the pan. Sprinkle with Paprika.
Bake in 375 degree oven for 45 minutes until browned and bubbly and cooked through.
Serve with Sour Cream and chopped Chives.
Tastes like Potato Pancakes without the fuss!

Serve with a nice Green Salad and dinner is served!

Project 52 - Still Life

The other day while at Minter Gardens, I was caught in a sudden rainstorm, so ducked into the gift store to seek refuge from the rain.
Get it, ducked into the store??
Okay, I know I have to work on the humor!!
Ready for the beach, or if you live here where rain is the norm, ready for the rain showers.
You can sleep away the day waiting for the sun to come out, but really here you miss too much time. Best to get out and get wet!
I personally am not one to buy such ornaments as were displayed here in this little gift store, but I do know that some people do enjoy and buy such trinkets.
Rubber Ducky you're the one....
Lots of Still Life in this little Gift Store, I left it all there for others to enjoy, and exited the store as soon as the rain stopped to continue my quest for the photo!!

Project 52 - Fiesta and Siesta

Minter Gardens in the Fraser Valley is a 23 acre sculpted garden that attracts tourists and like from everywhere to visit and stroll through its spectacular floral gardens, enjoy a yummy meal at one of its two restaurants, or is also a destination for outdoor weddings and events. The seasonal gardens opened a month ago and we got our yearly passes right away!
We went again three weeks after our first visit and the Gardens were a riot of colour with Tulips everywhere!
It is invigorating and calming to stroll through a garden. Beautiful to enjoy especially if it is not you having to weed it!

Tulips are one of my favorite flowers of Spring. Thier multitude of colours and shapes are fiestas for the eyes. How can you not feel cheery with a bouquet of Tulips or gardens of Tulips to enjoy!!

I've been looking around for some pictures of rocks and water lately to make myself a screen saver and these are a couple of shots from that series. I was inspired by a poster my Brother has in his office. These were taken at Rolley Lake in one of the small rivers that feed into the lake.

The creek was not as swollen with rain water as they are right now, offering a bit of texture from the surface of the water and the rocks below.
