Chicken Curry Dip

CHICKEN CURRY DIP

1 lb. Ground Chicken

1 medium chopped Onion

1 TBSP. Grated fresh Ginger

3 or 4 minced Garlic Cloves

1 tsp. Ground Cumin

1 1/2 tsp. Curry Powder

1/2 tsp. Pepper and 1/2 tsp. Salt

Fry all the above ingredients together until chicken is cooked and onions are browned well. Add the mixture to a large bowl.

Combine with:

8 oz. Cream Cheese, softened

1 Cup Grated Mozzarella

1/4 cup Golden Raisons

1/4 cup Mayonaise

1/4 cup chopped Green Onions

1 TBSP. Curry Powder or to taste.

Mix all ingredients together well and scoop the mixture into a Corning Ware 8x8 pan. Bake in the oven at 400 degrees for 18 to 20 minutes.

This comes out of the oven looking like this!

Onto the next step....

Cool baked dip for a couple of minutes until the bubbling stops, then spread the entire top of the dip with Mango Chutney.

This one will do! Spread a good thick layer of it over the top of the dip.

Here is what it will look like.

Now that the dip is covered with Mango Chutney it is ready for its final topping.

TOPPING:

1/4 Cup Sweetened Flaked Coconut

1/4 Cup Slivered Almonds

Garnish with Chopped Green Onions

And its ready to eat!

You can serve this warm dip with Pita Chips or Slices of Naan.

This dip has it all, sweet, salty, savoury and spicy. I am sure you will love it!

Ruby Tuesday gets wet on Watery Wednesday.

This past weekend, the owner of a Dragon Boat, launched the boat at the local Mill Lake and offered people a ride.

Each trip was around twenty minutes or so and went around the lake about twice before coming back to the boat launch.

I love the reflections of the boat and the life jackets in the water. There were other small boats out on the lake as well, enjoying the day fishing.

Macro Monday

What a weekend so far! I had a first this weekend and I am here to show it to you and tell you about it!

I am sure everyone has heard of Whoopie Pies, except me of course until this weekend! I think they are a sweet treat more found in the States than here in Canada. I know that before this weekend, I had never seen or heard of them, much less tasted one.

One of the newer bakeries here in town called Traceycakes, had a Whoopie Pie special. Two for the price of one of these sweet little cakes. Never have I had one before so of course we made plans to go and check it out!

There were six different flavours, here are Toasted Marshmallow, Mint with Chocolate Sprinkles and Salted Caramel.

These ones are Cookies and Cream, Raspberry and Chocolate. Six different flavours so hubby and I got one of each kind to share.

My favorite is the Salted Caramel. With the chocolate cake cookie base, it was a perfect combination!

They were very good, about the size of Oreo Cookies but fatter, and so incredibly sickly sweet that no way could the two of us finish them off to the last crumb. We did give it a good try though!

We washed the Whoopie Pies down with locally roasted Coffee with cream and more sugar. We were so overdosed on the sugar of the Pies and the Caffiene of the coffee that we literally bounced out of the bakery after. I honestly think I poisoned myself, or at least came darn close to it. I won't be going there anytime soon to repeat the lesson but I am glad I got the chance to try out something new and live to tell about it!

Today's Flowers

I've been waiting rather impatiently for Spring to come and have seen signs of its arrival but there are still not flowers around other than in stores and nurseries.

These few flowers are from the Orchid stand at the Cannor Nursery.

I was also playing with the Grey Card while taking these photos and trying to learn how to use this piece of equipment.

I think some of the photos looked better in the viewfinder rather than on the computer!

The Weekend in Black and White

These pictures for Monochrome Weekly are ones taken by my hubby. We go out together on Saturday's and find cool places to take photos together. I thought today, I would show you some of his photos!

Today we went out to the Heron Preserve in Chilliwack. Of course it started raining as soon as we got out of the car!

Outside of the Lodge building was an area with bird feeders about. It was a happening place for the small birds!

I am not one that knows the different kinds of birds so I don't have names for you. If you know what these are, it would be cool to here.

Skywatch Friday

SKYWATCH FRIDAY

We have had some pretty wicked weather lately, things like rain, hail, snow, sleet, thunder and lightning and wind all in one morning!

Yesterday, they were predicting a wind storm with warmer temperatures so I had to get out and take some photos and try and walk in the wind! Wind speed was recorded up to 96 Kilometers an hour or close to 60 miles per hour. And the light got sweet!

This is Willband Creek, a natural wetlands bird sanctuary.

The pools of water were partially frozen, and the grasses are dead looking and brown.

This is home to a lot of different birds, swans, geese, ducks and a line of seagulls.

So, I am trying to take a photo of a lone park bench, trying to stand still in gale force winds and decided to give it up so turned around and saw these scenes. The sky was stormy, the light was sweet and I snapped these photos.

Watery Wednesday

Hello and welcome to Watery Wednesday. We have had all forms of precipitation falling in the past few days, but it is the rain I am  looking forward to. The snow has mostly melted, the hail didn't break my skylight, although it sure sounded like it would. The freezing rain made the roads extra slick and could not see the Black Ice until the car started to slide a bit. Now the weather is warming up overnight and the rain is coming tomorrow. I can handle the rain!
