Tempt My Tummy Tuesday

I am constantly looking for different fresh cool salads that my Hubby will eat, ones that contain the various vegetables that he does like without just constantly making the same old, same old type salads. I found this recipe for Carrot salad and tweaked the recipe for the salad to the recipe I am going to share. I love the taste of Sesame but found the original dressing needed to be enhanced so played with the ingredients until I got what I wanted. 

CARROT SESAME SALAD

Combine matchstick Carrots, Red or Orange Peppers cut in matchsticks, and chopped green onions in a bowl.
You can actually add any vegetables you like such as sugar peas, cucumber, celery as long as your main ingredient is the carrots.
The more variety of vegetable, the better!!

Sesame Dressing:
1 TBSP. Rice Vinegar
1 TBSP. Olive Oil
1 TBSP. Sesame Oil
1 -1in. piece Grated fresh Ginger
3-4 cloves Grated fresh Garlic
1 TBSP. Toasted Sesame Seeds
1/4 tsp. Schirachi Chili Sauce
2 TBSP. Tahini
Salt and Pepper to taste.
Mix all ingredients together thouroughly.

Pour dressing over salad and garnish with 1 TBSP. Toasted Sesame Seeds and chopped green onions.
Can be mixed ahead of time so that flavours are allowed  to mingle.

Cucumber and Melon Salad
1 large Honeydew or Cantaloupe Melon
1 large English Cucumber
Cut up melon and cucumber into bite size pieces. You don't have to peel the cucumber if you choose. I like the added colour that the peel gives in the salad.

Dressing:
2 TBSP. Plain Yogurt
1 TBSP. Honey
2 TBSP. Fresh Lemon Juice
Zest of the Lemon
2 TBSP. Fresh Mint
4 chopped Scallions
1 tsp. Salt
1/2 tsp. Fresh Ground Pepper
Chopped chives for garnish
Mix dressing ingredients completely and toss in salad. Garnish with fresh minced chives and mint.

This is a very nice refreshing salad that pairs well with barbequed Salmon or Chicken.

Prawn and Orange Noodle Salad.

It's very hot today for the first full day of Summer. Not so much hot in temperature but hot in humidity. It's not a day to heat up anything cooking or otherwise. A cool supper out on the back sundeck was in order.

Combine in a large Salad Bowl:
1/3 cup Soy Sauce
1/4 cup fresh Lime Juice
3 TBSP Vegetable Oil
2 Garlic cloves, minced
2-3 tsp fresh Grated Ginger
Pinch Chili Flakes
Cook 1-250gram package Rice Noodles,according to package directions
350grams cooked Salad Shrimp
1 large Orange, peeled and sectioned. (Can use Mango too)
1/3 English Cucumber, thinly sliced
1/4 thinly sliced red Onion
1/2 Yellow Pepper, thinly sliced
1/2 cup Roasted Cashews,coarsely chopped
1/4 cup fresh Cilantro, chopped.
Add Noodles and remaining ingredients to the salad dressing in large bowl and toss to combine ingredients.

I think this salad would of gone really nice with an ice cold glass of something like Chardonnay but I did not have any here. Next time though!!
